Ingredients

  • 1 1/2 limes
  • juiced (plus zest from 1 lime for brightness)
  • 1 cup cherries
  • halved and pitted
  • Salt
  • to taste (sea salt is lovely here)
  • 1 large handful cilantro
  • fresh and finely chopped
  • 2 garlic cloves
  • minced
  • 2 peaches
  • diced into 1/2-inch pieces
  • 1 jalapeño pepper
  • chopped (seeds removed for less heat)
  • 1/2 small red onion
  • finely diced

Instructions

  1. In a large mixing bowl, combine the diced peaches, halved cherries, and finely diced red onion.
  2. Add the minced garlic, chopped jalapeño, and chopped cilantro to the bowl.
  3. Squeeze the juice of the limes over the mixture, adding the zest for extra brightness.
  4. Season with sea salt to taste and mix everything well until combined.
  5. Let the salsa sit for at least 15 minutes before serving to allow flavors to meld.
