This Healthy Creamy Pasta Salad is a delightful blend of fresh veggies and a creamy dressing, perfect for any occasion.


Ingredients

1 lb. curly-shaped pasta (such as fusilli or gemelli)

1 lb. cherry tomatoes

1 cup frozen/thawed green peas

1/2 cup finely chopped red onion

1/2 cup finely chopped celery

1 (3 to 4 oz.) can sliced black olives

3 Tbsp. finely chopped fresh chives

3 Tbsp. chopped fresh dill

1/3 cup mayonnaise or full-fat Greek yogurt (I use avocado oil mayo)

1/2 cup extra-virgin olive oil

1 Tbsp. lemon zest

plus 3 Tbsp. fresh lemon juice

1 tsp. kosher salt

1/2 tsp. black pepper

1/2 tsp. garlic powder


Instructions

  • Cook the pasta according to package instructions, then drain and let cool.
  • In a large bowl, combine the cooled pasta with cherry tomatoes, green peas, red onion, celery, black olives, chives, and dill.
  • In a separate bowl, whisk together the mayonnaise (or Greek yogurt), olive oil, lemon zest, lemon juice, salt, pepper, and garlic powder until smooth.
  • Pour the dressing over the pasta mixture and toss gently to coat.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
