Description
This Healthy Chicken Taco Casserole is a delicious and wholesome dish made with shredded chicken, whole wheat tortillas, and a medley of colorful vegetables, perfect for a family dinner.

- 1 tablespoon olive oil
- 1 garlic clove minced
- 1 yellow onion diced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 15 ounces black beans canned
- drained and rinsed
- 1 tablespoon taco seasoning
- 4 whole wheat tortillas 8″
- 2 cups cooked chicken shredded
- 2 cups low fat Mexican blend cheese
- 1 cup enchilada sauce store bought

- 1/4 cup green onion chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat the olive oil over medium heat and sauté the garlic, onion, and bell peppers until softened.
- Stir in the black beans and taco seasoning, mixing well and cooking for an additional 2 minutes.
- Layer the bottom of a baking dish with two whole wheat tortillas, followed by half of the chicken mixture and half of the cheese.
- Repeat the layers with the remaining tortillas, chicken mixture, and cheese, then drizzle the enchilada sauce over the top.
- Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped green onions, and serve warm.
Notes
Feel free to customize the vegetables or add black olives for extra flavor. This casserole is perfect for leftovers!
