- 2 cups cooked brown rice
- 1 ½ pounds boneless
- skinless chicken breasts
- cut into thin strips
- 1 large bell pepper
- sliced
- 1 small onion
- sliced
- 1 (14.5 oz.) can diced tomatoes
- well drained
- 1 tablespoon extra-virgin olive oil
- 1 ½ teaspoons ground cumin
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon cayenne pepper
- ¼ teaspoon black pepper
- ⅛ teaspoon garlic powder
- ⅛ teaspoon onion powder
- 1–2 cups shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, cooking until they are softened, about 5 minutes.
- Add the sliced chicken to the skillet, followed by the cumin, oregano, salt, cayenne pepper, black pepper, garlic powder, and onion powder. Cook until the chicken is no longer pink, about 7-10 minutes.
- Stir in the drained diced tomatoes and cooked brown rice until evenly combined.
- Transfer the mixture to a greased baking dish and spread evenly. Top with shredded cheddar cheese.
- Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before serving. Top with your favorite fajita toppings like shredded lettuce, salsa, sour cream, or avocado slices.
Notes
For a spicier dish, increase the cayenne pepper to taste or use a store-bought fajita seasoning substitute.
