- Cooking spray or 2 teaspoons olive oil
- ½ white onion – diced
- 5 oz fresh spinach
- 6 large eggs
- 4 egg whites
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ cup milk
- ¼ cup shredded cheddar cheese
- 1 cup sliced cherry tomatoes
- 6 English muffins – sourdough or whole wheat
- 6 cheddar cheese slices
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a baking dish with cooking spray or olive oil.
- In a skillet over medium heat, sauté the diced onion in olive oil until translucent, about 5 minutes.
- Add the fresh spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.
- In a large bowl, combine the eggs, egg whites, kosher salt, black pepper, and milk. Whisk until well combined.
- Fold in the sautéed onions, spinach, shredded cheddar cheese, and cherry tomatoes into the egg mixture.
- Pour the mixture into the prepared baking dish and bake for 25-30 minutes, or until the eggs are set.
- Allow to cool slightly, then cut into squares fitting the size of your English muffins.
- Toast the English muffins and top each half with an egg square and a slice of cheddar cheese. Serve warm or let cool and pack for later.
Notes
These sandwiches can be stored in the refrigerator for up to 4 days. Reheat in the microwave for a quick breakfast.
