Description

This Healthy Baked Chicken Parmesan is a lighter take on the classic Italian dish, featuring crispy chicken breasts baked to perfection and topped with gooey mozzarella cheese and marinara sauce.


Ingredients

  • 1.5 lbs boneless
  • skinless chicken breasts about 3 large chicken breasts OR 1.5 lbs chicken cutlets
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cup shredded mozzarella
  • 1.5 cups marinara sauce
  • 1 cup whole wheat bread crumbs unseasoned
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up a dredging station with three shallow bowls: one with whole wheat flour, one with beaten eggs, and one with the breading mixture (bread crumbs, Parmesan cheese, black pepper, basil, and parsley) in it.
  3. Dip each piece of chicken first in the flour, then in the eggs, and finally in the breading mixture, pressing gently to adhere.
  4. Place the breaded chicken on the prepared baking sheet and bake for 20 minutes until golden brown.
  5. Remove the chicken from the oven, spoon marinara sauce over each piece, and top with shredded mozzarella.
  6. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Serve hot, garnished with additional herbs if desired.

Notes

For extra flavor, consider adding some crushed red pepper flakes to the marinara sauce. This dish pairs well with a side salad or whole grain pasta.
