- 1.5 lbs boneless
- skinless chicken breasts about 3 large chicken breasts OR 1.5 lbs chicken cutlets
- ½ cup whole wheat flour
- 3 large eggs
- 1.5 cup shredded mozzarella
- 1.5 cups marinara sauce
- 1 cup whole wheat bread crumbs unseasoned
- ½ cup grated Parmesan cheese
- ¼ teaspoon black pepper
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Set up a dredging station with three shallow bowls: one with whole wheat flour, one with beaten eggs, and one with the breading mixture (bread crumbs, Parmesan cheese, black pepper, basil, and parsley) in it.
- Dip each piece of chicken first in the flour, then in the eggs, and finally in the breading mixture, pressing gently to adhere.
- Place the breaded chicken on the prepared baking sheet and bake for 20 minutes until golden brown.
- Remove the chicken from the oven, spoon marinara sauce over each piece, and top with shredded mozzarella.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with additional herbs if desired.
Notes
For extra flavor, consider adding some crushed red pepper flakes to the marinara sauce. This dish pairs well with a side salad or whole grain pasta.
