160 g rolled oats
90 g oat bran
75 g xylitol (or sweetener of choice)
2 tsp baking powder
3 tsp cinnamon
150 ml milk (of choice)
200 g Greek yoghurt
2 large eggs
1 tsp vanilla extract
350 g apple
grated
60 g chopped nuts
1 tsp cinnamon
1 tsp xylitol
Instructions
- Preheat your oven to 180°C (350°F) and grease a cake pan.
- In a large bowl, combine rolled oats, oat bran, xylitol, baking powder, and cinnamon.
- In another bowl, whisk together milk, Greek yoghurt, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
- Fold in the grated apple.
- Pour the batter into the prepared cake pan.
- In a small bowl, mix chopped nuts, cinnamon, and xylitol for the topping, and sprinkle it over the batter.
- Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serve.
Notes
For added sweetness, feel free to adjust the amount of xylitol or sweetener used. You can substitute the apples with other fruits like pears or bananas if desired.
