  • 1 cup sweet onion chopped
  • 2 cups Hatch Green Chiles roasted cleaned and roughly chopped
  • ½ cup red bell pepper
  • 2 cloves garlic minced
  • ½ cup all-purpose flour
  • 1 tsp cumin
  • 6 cups chicken stock warmed
  • ½ cup Mexican cheese combination queso fresca or mozzarella cheese shredded
  • 3 Tbsp cilantro chopped
  • For the Garnish Fried tortilla strips
  • ½ cup sour cream
  • 1 Tbsp cilantro chopped
  • 34 green onions chopped

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and red bell pepper to the pot and sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Sprinkle in the flour and cumin, stirring continuously for about 2 minutes to create a roux.
  5. Gradually whisk in the warm chicken stock, ensuring there are no lumps.
  6. Bring the mixture to a simmer and add the roasted Hatch Green Chiles.
  7. Let the soup simmer for 15 minutes, then stir in the cheese until melted and creamy.
  8. Finish with chopped cilantro and adjust seasoning if needed.
  9. Serve hot, garnished with fried tortilla strips, sour cream, chopped cilantro, and green onions.

Notes

For extra flavor, consider adding some diced potatoes or corn to the soup. Adjust the spiciness by using more or fewer Hatch Green Chiles.
