Ingredients

  • Onion
  • Carrots
  • Celery
  • Cumin
  • Granulated garlic
  • Chicken stock or turkey broth
  • Parsnips
  • Fire-roasted Hatch chiles
  • Leftover turkey
  • Salt and pepper
  • Heavy cream

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add chopped onion, carrots, and celery; sauté until softened.
  3. Stir in cumin and granulated garlic, cooking for an additional minute.
  4. Pour in the chicken stock or turkey broth and add parsnips and fire-roasted Hatch chiles.
  5. Bring to a simmer and cook until the parsnips are tender.
  6. Add leftover turkey, salt, and pepper to taste.
  7. Stir in heavy cream and heat through before serving.
