Ingredients

Instructions
- Heat oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery; sauté until softened.
- Stir in cumin and granulated garlic, cooking for an additional minute.
- Pour in the chicken stock or turkey broth and add parsnips and fire-roasted Hatch chiles.
- Bring to a simmer and cook until the parsnips are tender.
- Add leftover turkey, salt, and pepper to taste.
- Stir in heavy cream and heat through before serving.
