- 1.5 pounds tomatillos
- fresh
- husks and stems removed
- 4 hatch chiles
- stemmed
- ½ cup white onion
- chopped
- ½ cup cilantro leaves

- 2 garlic cloves
- 2 limes

- juiced
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 450°F (230°C). Place the tomatillos and hatch chiles on a baking sheet.
- Roast for 15-20 minutes, or until the tomatillos are soft and slightly charred.
- Remove from the oven and let cool slightly. Peel the hatch chiles and remove the seeds if desired.
- In a blender, combine the roasted tomatillos, hatch chiles, onion, cilantro, garlic, lime juice, salt, and black pepper. Blend until smooth.
- Taste and adjust seasoning if necessary. Serve fresh with chips or as a topping for your favorite meals.
Notes
For a spicier salsa, leave some seeds in the hatch chiles. This salsa can be stored in an airtight container in the refrigerator for up to a week.
