Description

Ingredients

  • 8 oz of pasta
  • 4 hatch chiles
  • 2 tablespoons of olive oil
  • 3 cloves of garlic
  • 1 small onion
  • 1 cup of heavy cream
  • 1⁄2 cup of chicken or vegetable broth
  • 1 cup of grated parmesan cheese
  • Salt and freshly ground black pepper
  • 1 tablespoon of lime juice
  • Fresh cilantro
  • Crushed red pepper flakes

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat, then add the chopped onions and cook until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the chopped hatch chiles, heavy cream, and chicken or vegetable broth, mixing well and bringing the mixture to a gentle simmer.
  5. Gradually add the grated parmesan cheese, stirring until melted and the sauce is creamy.
  6. Season the sauce with salt, black pepper, and lime juice to taste.
  7. Add the cooked pasta to the sauce, tossing to coat evenly.
  8. Serve hot, garnished with fresh cilantro and crushed red pepper flakes if desired.
