This Harvest Salad features roasted butternut squash, crisp bacon, and tangy goat cheese, tossed with a sweet and savory dressing for a delicious, nutritious meal perfect for fall.

- 1 small butternut squash
- 1 tablespoon extra virgin olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 4 slices thick-cut bacon
- 4 large eggs
- 2 whole boneless
- skinless chicken breasts
- 8 cups mixed greens
- 1 sweet crisp apple
- 2 ripe avocados
- ½ cup dried cranberries
- ½ cup crumbled goat cheese
- ⅓ cup toasted pepitas
- ¼ cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons pure maple syrup
- 1 teaspoon Dijon mustard
- 1 clove garlic
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the diced butternut squash with 1 tablespoon olive oil, ½ teaspoon salt, and ¼ teaspoon pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels. In the same skillet, cook the chicken breasts until fully cooked, about 6-7 minutes per side. Let rest and slice.
- Hard boil the eggs for about 10 minutes, then cool and peel.
- In a large bowl, combine mixed greens, sliced apple, avocados, cranberries, roasted squash, and sliced chicken.
- For the dressing, whisk together ¼ cup olive oil, apple cider vinegar, maple syrup, Dijon mustard, minced garlic, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine. Top with crumbled bacon, sliced eggs, goat cheese, and pepitas.
