Delight in the magical flavors of Harry Potter with these Butterbeer Cupcakes, a sweet treat infused with butterscotch and topped with rich buttercream.
Ingredients
3 cups (710 ml) butterscotch beer
1/2 cup (112 g) unsalted butter
softened
1/2 cup (110 g) light brown sugar
packed
1/4 cup (50 g) granulated white sugar
2 eggs
at room temperature
2 tsp vanilla bean paste or extract
1 tsp butter extract
1/3 cup (56 g) butterscotch chips
melted and slightly cooled
1/2 cup (120 ml) buttermilk
at room temperature
1 3/4 cups (219 g) all purpose flour
spooned and leveled then sifted
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 1/2 cups (336 g) unsalted butter
softened
1 cup (170 g) butterscotch chips
melted and slightly cooled
2 1/4 cups (290 g) powdered sugar
measured then sifted
3/4 tsp butter extract
1/2 tsp vanilla
1/4 cup (42 g) butterscotch chips
1 tbsp heavy cream
1/2 tbsp honey
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a large bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla bean paste and butter extract.
- Mix the melted butterscotch chips with the butterscotch beer and buttermilk.
- Gradually add the butterscotch beer mixture to the butter mixture, mixing just until combined.
- In a separate bowl, whisk together the sifted flour, baking powder, baking soda, and salt. Gradually add this to the wet ingredients.
- Fill each cupcake liner about 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely before icing with butterscotch buttercream.
- For the buttercream, beat the softened butter until creamy, then gradually add the powdered sugar and melted butterscotch chips, beating until smooth.
- For the ganache drizzle, melt butterscotch chips with heavy cream and honey until smooth, then drizzle over the frosted cupcakes.
Notes
Make sure to let the cupcakes cool completely before applying the buttercream to prevent it from melting. Adjust the thickness of the ganache by altering the amount of heavy cream used.
