Description

Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion chopped
  • 1 small green pepper seeded and chopped
  • 3 cloves garlic minced
  • 2 tsp chili powder
  • 3/4 tsp salt
  • 1/3 tsp pepper
  • 3 medium zucchini cubed
  • 2 large tomatoes seeded and diced
  • 1/4 c. water
  • 1 c. uncooked instant brown rice
  • 1 c. shredded colby jack cheese

Instructions

  1. In a large skillet over medium heat, cook the ground beef, onion, green pepper, and garlic until the beef is browned and the vegetables are tender.
  2. Stir in the chili powder, salt, and pepper; mix well.
  3. Add the cubed zucchini, diced tomatoes, water, and uncooked rice. Stir to combine.
  4. Cover the skillet and simmer for about 20 minutes, or until the rice and zucchini are cooked.
  5. Remove from heat and sprinkle shredded colby jack cheese on top. Cover until the cheese is melted.

Notes

Feel free to customize the vegetables based on what you have on hand. This dish can also be made with ground turkey or chicken for a lighter option.
