- 1 medium yellow onion chopped
- 1 small green pepper seeded and chopped
- 3 cloves garlic minced
- 2 tsp chili powder
- 3/4 tsp salt
- 1/3 tsp pepper
- 3 medium zucchini cubed
- 2 large tomatoes seeded and diced
- 1/4 c. water
- 1 c. uncooked instant brown rice
- 1 c. shredded colby jack cheese
Instructions
- In a large skillet over medium heat, brown the ground beef with the chopped onion, green pepper, and minced garlic until the beef is fully cooked.
- Stir in the chili powder, salt, and pepper, cooking for another minute.
- Add the cubed zucchini, diced tomatoes, and water, stirring to combine.
- Stir in the instant brown rice, cover, and simmer until the rice is cooked and the zucchini is tender, about 20 minutes.
- Sprinkle the shredded colby jack cheese over the mixture, cover, and let it melt before serving.
Notes
For added flavor, you can substitute the ground beef with turkey or chicken. Adjust seasoning as per your taste.
