Ingredients
500g fresh rhubarb
cut into 2–3cm pieces
1 large orange
zest and juice
100g light soft brown sugar
Butter for greasing
150g plain flour
100g butter
softened (plus extra for dotting)
75g light soft brown sugar
75g porridge oats
½ teaspoon ground cinnamon
A pinch of salt
Instructions
- Preheat your oven to 180°C (350°F) and grease a baking dish with butter.
- In a bowl, combine the rhubarb, orange zest, orange juice, and light soft brown sugar. Mix well and pour the mixture into the prepared baking dish.
- In another bowl, mix together the plain flour, softened butter, light soft brown sugar, porridge oats, ground cinnamon, and a pinch of salt until crumbly.
- Spread the crumble topping evenly over the rhubarb filling. Dot with a bit of extra butter on top.
- Bake in the preheated oven for about 30 minutes, or until the topping is golden-brown and the filling is bubbling.
