This Ground Turkey Meatloaf is a healthier take on a classic comfort food, packed with flavor and nutrients. With tender ground turkey, veggies, and a cheesy surprise, it’s the perfect dish for the whole family.
Ingredients
1/3 cup panko bread crumbs
1/3 cup milk
1/4 cup grated white onion
10 oz. frozen riced broccoli (about 2 cups)
1/3 cup ketchup
1/4 cup yellow mustard
1 egg
2 tsp. seasoning salt
1/2 tsp. black pepper
2 lbs. ground turkey
1 1/2 cups shredded cheddar cheese
extra ketchup for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the panko bread crumbs, milk, grated onion, riced broccoli, ketchup, yellow mustard, egg, seasoning salt, and black pepper.
- Add the ground turkey and shredded cheddar cheese to the mixture and mix until well combined.
- Transfer the meat mixture into a loaf pan and shape it into a loaf.
- Spread extra ketchup on top of the meatloaf if desired.
- Bake in the preheated oven for 30-35 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Feel free to substitute the frozen riced broccoli with fresh if you prefer. This meatloaf can also be made ahead and frozen for an easy weeknight meal.
