Ingredients

  • 1 lb lean ground beef 80/20 or 90/10 blend
  • 2 tbsp tomato paste
  • 1/4 cup beef broth
  • 1 tbsp taco seasoning
  • 4 large flour tortillas
  • 1.5 cups bright orange cheddar cheese
  • 1.5 cups white Monterey Jack cheese
  • 1 tbsp vegetable oil
  • 2 tbsp fresh green cilantro
  • 1/2 cup smooth white sour cream

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up as it cooks.
  2. Stir in the tomato paste, beef broth, and taco seasoning, and cook for an additional 5 minutes until the mixture thickens and is heated through.
  3. Remove the beef mixture from the heat and let it cool slightly.
  4. Lay one tortilla flat and spread a portion of the beef mixture on one side, then top with equal parts of the cheddar and Monterey Jack cheese.
  5. Fold the tortilla over to create a half-moon shape, pressing gently.
  6. In the same skillet, heat the vegetable oil over medium heat and add the folded quesadilla. Cook for 3-4 minutes on each side, or until golden-brown and crispy.
  7. Repeat with the remaining tortillas and filling.
  8. Slice the quesadillas into wedges and garnish with chopped cilantro. Serve with sour cream for dipping.

Notes

You can customize your quesadillas with additional fillings like peppers or onions. For a spicier kick, add sliced jalapeños.
