- 1 lb lean ground beef 80/20 or 90/10 blend
- 2 tbsp tomato paste
- 1/4 cup beef broth
- 1 tbsp taco seasoning
- 4 large flour tortillas
- 1.5 cups bright orange cheddar cheese
- 1.5 cups white Monterey Jack cheese
- 1 tbsp vegetable oil
- 2 tbsp fresh green cilantro
- 1/2 cup smooth white sour cream
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up as it cooks.
- Stir in the tomato paste, beef broth, and taco seasoning, and cook for an additional 5 minutes until the mixture thickens and is heated through.
- Remove the beef mixture from the heat and let it cool slightly.
- Lay one tortilla flat and spread a portion of the beef mixture on one side, then top with equal parts of the cheddar and Monterey Jack cheese.
- Fold the tortilla over to create a half-moon shape, pressing gently.
- In the same skillet, heat the vegetable oil over medium heat and add the folded quesadilla. Cook for 3-4 minutes on each side, or until golden-brown and crispy.
- Repeat with the remaining tortillas and filling.
- Slice the quesadillas into wedges and garnish with chopped cilantro. Serve with sour cream for dipping.
Notes
You can customize your quesadillas with additional fillings like peppers or onions. For a spicier kick, add sliced jalapeños.
