Deliciously smoky and sweet, this Grilled Bourbon Peach BBQ Chicken features juicy chicken thighs marinated in a tangy bourbon peach sauce complemented by the sweetness of grilled peaches.
Ingredients
6 chicken thighs boneless
skin on or off
3 peaches cored
quartered
Bourbon Peach BBQ Sauce
1 peach skin off
cored
diced
1 teaspoon sugar
½ cup barbeque sauce
3 tablespoon bourbon
1 tsp each onion powder
garlic powder
paprika
chili powder
¼ teaspoon cayenne pepper
1 teaspoon salt
½ teaspoon black pepper
Instructions
- In a bowl, mix together the spice rub ingredients: onion powder, garlic powder, paprika, chili powder, cayenne pepper, salt, and black pepper.
- Rub the spice mixture all over the chicken thighs and let marinate for at least 15 minutes.
- Preheat your grill to medium-high heat and brush the grates with oil.
- Grill the chicken thighs for about 6-7 minutes per side or until the internal temperature reaches 165°F.
- During the last few minutes of grilling, add the quartered peaches to the grill, cooking until they are slightly charred.
- In a small saucepan, combine the diced peach, sugar, barbeque sauce, and bourbon. Heat over medium heat until the sauce is warm and combined.
- Serve the grilled chicken with the Bourbon Peach BBQ Sauce drizzled on top and the grilled peaches on the side.
Notes
For a deeper flavor, marinate the chicken thighs in the spice rub overnight. Adjust the sweetness of the BBQ sauce by adding more or less sugar based on your preference.
