- 1 tablespoon olive oil
- 1 medium onion
- diced
- 1 medium green bell pepper
- diced
- 2 large garlic cloves

- 1 small jalapeño
- finely chopped
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 lb (450 g) chicken breast
- cut into 1-inch pieces
- 2 tablespoons green chilis in brine
- drained and chopped
- 1 can (14 oz / 400 g) cannellini beans
- drained and rinsed
- 1 jar (8.5 oz / 250 g) mild salsa verde
- 5 cups (1.25 liter) chicken stock
- 2 tablespoons lime juice
- Salt and freshly ground black pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and green bell pepper, cooking until softened, about 5 minutes.
- Stir in the garlic, jalapeño, ground cumin, and ground coriander, cooking for another minute until fragrant.
- Add the chicken pieces to the pot, cooking until browned on all sides, about 5-7 minutes.
- Mix in the chopped green chilies, cannellini beans, salsa verde, and chicken stock. Bring the soup to a gentle boil.
- Reduce the heat and simmer for 20 minutes, allowing the flavors to meld.
- Stir in lime juice and season with salt and black pepper to taste before serving.
Notes
For an extra kick, you can add more jalapeño or serve the soup with fresh cilantro and avocado on top.
