- 2 tbsp olive oil
- 1 small yellow onion – diced
- 1 cup corn – (from about 2 ears)
- 4 cloves garlic – minced
- 1 tbsp ground coriander
- 1 1/2 tsp ground cumin
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 3 Hatch chiles – (fire roasted)
- seeds removed and diced
- 1 (16 oz) jar salsa verde
- 4 cup low-sodium chicken broth
- 1 cup water
- 1 lime – juiced
- 1 small rotisserie chicken – pulled
- 1 tbsp fresh cilantro – chopped
- 1/2 cup long grain white rice
- Optional Garnish: lime wedges

Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
- Stir in the corn and garlic, cooking for another 2 minutes.
- Add the ground coriander, ground cumin, paprika, salt, and black pepper; cook for 1 minute until fragrant.
- Mix in the diced Hatch chiles, salsa verde, chicken broth, and water. Bring to a simmer.
- Stir in the lime juice and pulled rotisserie chicken.
- Add the rice and cook for 20 minutes until rice is tender and the stew has thickened.
- Serve hot, garnished with fresh cilantro and optional toppings like lime wedges, avocado, tortilla strips, or sour cream.
Notes
If fresh Hatch chiles are unavailable, canned green chiles can be substituted. For extra flavor, consider adding more spices to taste.
