This Green Chile Chicken Stew is a flavorful and hearty dish packed with the rich taste of fire-roasted chiles and tender rotisserie chicken, perfect for cozy nights.

- 2 tbsp olive oil
- 1 small yellow onion – diced
- 1 cup corn – (from about 2 ears)
- 4 cloves garlic – minced
- 1 tbsp ground coriander
- 1 1/2 tsp ground cumin
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 3 Hatch chiles – (fire roasted)
- seeds removed and diced
- 1 (16 oz) jar salsa verde
- 4 cup low-sodium chicken broth
- 1 cup water
- 1 lime – juiced
- 1 small rotisserie chicken – pulled
- 1 tbsp fresh cilantro – chopped
- 1/2 cup long grain white rice
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Stir in the corn, minced garlic, ground coriander, ground cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until fragrant.
- Add the diced Hatch chiles and salsa verde, stirring to combine. Pour in the chicken broth and water. Bring to a boil.
- Once boiling, add the rice, lime juice, and pulled rotisserie chicken. Reduce the heat to low and let simmer for 20 minutes or until the rice is cooked.
- Stir in the chopped cilantro just before serving. Adjust seasoning if needed.
Notes
If you can’t find fresh Hatch chiles, you can substitute with canned green chiles. This stew can be topped with optional garnishes such as lime wedges, avocado chunks, cilantro, tortilla strips, and sour cream for added flavor and texture.
