Ingredients
1 ½ cups graham cracker crumbs
½ cup unsalted butter
melted
¼ cup granulated sugar
16 oz cream cheese
softened
½ cup Greek yogurt
½ cup honey
2 large eggs
1 tsp vanilla extract
½ cup finely chopped pistachios
¼ cup honey for drizzling
¼ cup chopped pistachios for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and press the mixture into the bottom of the prepared dish.
- In another bowl, beat the softened cream cheese until smooth. Add the Greek yogurt, honey, eggs, and vanilla extract, mixing until the batter is creamy and well combined.
- Fold in the finely chopped pistachios into the cheesecake mixture.
- Pour the cheesecake filling over the prepared crust and spread evenly.
- Bake in the preheated oven for 30 minutes or until the center is set.
- Remove from the oven and let cool, then refrigerate for at least 2 hours before serving.
- Once chilled, drizzle with honey and sprinkle the chopped pistachios on top before cutting into bars.
Notes
For best results, chill the cheesecake bars overnight to allow flavors to meld. You can substitute almonds or walnuts for pistachios if desired.
