  • 1 pound ground chicken
  • 1 small onion

  • 3 cloves garlic

  • 1 cup cherry tomatoes
  • diced
  • 1/2 cup bell pepper
  • diced (any color)
  • 1/2 cup feta cheese
  • crumbled
  • 1/4 cup Kalamata olives
  • pitted and chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried dill
  • 1/2 teaspoon red pepper flakes (optional
  • for some heat)
  • 1/4 cup fresh parsley
  • chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Extra parsley
  • chopped
  • Additional feta cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut zucchini in half lengthwise and scoop out the seeds to create boats. Brush with olive oil and season with salt and pepper.
  3. In a skillet over medium heat, cook the chopped onion and garlic until fragrant.
  4. Add the ground chicken to the skillet and cook until no longer pink. Stir in cherry tomatoes, bell pepper, feta cheese, olives, oregano, thyme, dill, red pepper flakes, lemon juice, parsley, and season with salt and pepper.
  5. Fill the zucchini boats with the chicken mixture and place them in a baking dish.
  6. Bake in the preheated oven for 25-30 minutes, until zucchini is tender and filling is cooked through.
  7. Garnish with extra parsley and additional feta cheese before serving.
