Description

These Gluten Free Lemon Bars are a tangy, sweet treat with a buttery crust and a refreshing lemon filling, perfect for any occasion.


Ingredients

  • 1 cup (140 g) gum-free gluten free flour blend
  • ½ cup (58 g) confectioners’ sugar
  • ½ teaspoon kosher salt
  • 1 tablespoon finely grated lemon zest
  • 9 tablespoons (126 g) unsalted butter
  • melted and cooled
  • ⅔ cup (93 g) gum-free gluten free flour blend
  • 1 cup (200 g) granulated sugar
  • ¾ teaspoon baking powder
  • ⅔ cup (5.33 fluid ounces) freshly squeezed lemon juice
  • 4 (200 g out of shell) eggs
  • at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, combine the gum-free gluten free flour blend, confectioners’ sugar, kosher salt, and lemon zest. Stir in the melted butter until the mixture is crumbly.
  3. Press the crust mixture evenly into the bottom of the prepared baking pan. Bake for 15 minutes until lightly golden.
  4. While the crust is baking, prepare the filling by whisking together the gum-free gluten free flour blend, granulated sugar, and baking powder in a large bowl.
  5. Add the freshly squeezed lemon juice and eggs to the dry ingredients, whisking until smooth and well combined.
  6. Pour the lemon filling over the pre-baked crust and return to the oven to bake for 20-25 minutes, or until the filling is set and a toothpick comes out clean.
  7. Allow to cool completely, then dust with additional confectioners’ sugar before slicing into bars for serving.

Notes

For best results, use room temperature eggs and freshly squeezed lemon juice. Adjust sugar levels according to your preference for sweetness.
