- ¼ cup unsalted butter softened/room temperature
- ½ cup white sugar
- ½ cup brown sugar
- ¾ cup peanut butter
- 1 egg
- 1 egg yolk
- 2 teaspoons vanilla
- 2 cups gluten free quick oats
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chocolate chips
- ½ cup mini m&ms
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened butter, white sugar, brown sugar, and peanut butter until smooth and creamy.
- Add in the egg, egg yolk, and vanilla extract, mixing well until fully incorporated.
- In another bowl, whisk together the gluten free oats, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Fold in the chocolate chips and mini m&ms.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
