  • 5 eggs

  • 8 ounces bittersweet or semisweet chocolate chopped or use chips
  • 1 1/3 cup powdered sugar
  • 2 8oz packages cream cheese softened
  • 2 teaspoons vanilla extract
  • 2 cups cold heavy cream
  • 3/4 cup cold heavy cream
  • 2 tablespoons powdered sugar
  • 2 teaspoons vanilla extract
  • Grated chocolate for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a springform pan with parchment paper.
  2. In a medium saucepan over low heat, melt the butter and chocolate together until smooth. Remove from heat and stir in the sugar.
  3. Allow the mixture to cool slightly, then whisk in the eggs, vanilla extract, and salt.
  4. Fold in the gluten-free flour until just combined. Pour the batter into the prepared pan.
  5. Bake for 30 minutes or until the center is set. Let cool completely.
  6. For the chocolate mousse, melt the chocolate in a double boiler or microwave. In a bowl, beat the cream cheese until smooth, then add the melted chocolate and powdered sugar, mixing until combined.
  7. In another bowl, whip the cold heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.
  8. Spread the mousse over the cooled cake and refrigerate for at least 4 hours or until set.
  9. For the whipped cream, beat the cold heavy cream with the powdered sugar and vanilla until soft peaks form. Serve slices of the cake topped with whipped cream and garnished with grated chocolate if desired.
