Description

These Ghost Cinnamon Rolls are a delightful treat featuring a soft brioche dough, filled with a spiced cinnamon mix, and topped with a creamy, spooky icing. Perfect for festive occasions!

  • ¼ cup (50g) granulated sugar
  • 2¼ teaspoons instant yeast
  • 1 teaspoon salt
  • ¾ cup (180ml) warm whole milk
  • 2 large eggs

  • ¾ cup (150g) brown sugar
  • 2 tablespoons ground cinnamon
  • ½ teaspoon vanilla extract

  • 4 ounces (113g) cream cheese
  • softened
  • 2 tablespoons unsalted butter
  • softened
  • 1½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons heavy cream or milk
  • pinch of salt

Instructions

  1. In a large bowl, combine bread flour, granulated sugar, instant yeast, and salt.
  2. Warm the whole milk until it is about 110°F (43°C) and then add it to the dry ingredients along with eggs and softened butter.
  3. Mix until a dough forms and knead for about 5-7 minutes until smooth. Cover and let rise for 1 hour or until doubled in size.
  4. Prepare the cinnamon filling by mixing softened butter, brown sugar, ground cinnamon, vanilla extract, and a pinch of salt in a bowl until well combined.
  5. Roll out the dough on a floured surface into a rectangle, spread the cinnamon filling evenly, and roll it tightly into a log.
  6. Cut the log into 12 equal slices and place them in a greased baking dish. Let them rise for another 30 minutes.
  7. Preheat the oven to 375°F (190°C) and bake the rolls for about 25-30 minutes or until golden brown and cooked through.
  8. While the rolls are baking, prepare the ghost cream cheese icing by beating together softened cream cheese, unsalted butter, powdered sugar, vanilla extract, heavy cream or milk, and a pinch of salt until smooth.
  9. Once the rolls are done, let them cool slightly, then drizzle or spread the icing over the top. Enjoy your Ghost Cinnamon Rolls!
