A delightful and vibrant Garlic Scape Pasta that brings out the fresh flavors of garlic scapes, perfectly paired with spaghetti for a delicious meal.
Ingredients
1 pound (454 grams) spaghetti
2 tablespoons (30 ml) olive oil
2 tablespoons (28 grams) butter
30 garlic scapes
sliced
½ teaspoon fine sea salt
plus more for the pasta water
Juice of 1 lemon
about 3 tablespoons/(45 ml)
½ cup 2 ounces/(60 grams) grated parmesan cheese
¼ teaspoon freshly ground black pepper
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- In a large skillet, heat the olive oil and butter over medium heat. Add the sliced garlic scapes and sauté for about 5 minutes until tender.
- Once the spaghetti is done, reserve 1 cup of pasta water, then drain the rest and add the spaghetti to the skillet with garlic scapes.
- Add lemon juice, parmesan cheese, salt, and freshly ground black pepper to the pasta. Toss well, adding reserved pasta water as needed to create a creamy sauce.
- Serve immediately, garnished with extra parmesan if desired.
Notes
Feel free to adjust the amount of garlic scapes based on your taste preference. This dish can also be customized with additional vegetables or proteins.
