Ingredients

  • 2 tablespoons olive oil
  • 2 medium zucchini sliced
  • salt and pepper to taste
  • 1.5 cups corn kernels cooked
  • 1 lb chicken breasts skinless boneless sliced
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • black pepper freshly ground to taste
  • 5 cloves garlic minced
  • 2 tablespoons freshly squeezed lime juice
  • 4 tablespoons butter divided
  • ½ cup fresh cilantro chopped

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the sliced zucchini, season with salt and pepper, and cook until slightly tender, about 4-5 minutes.
  3. Add the corn kernels and cook for another 2-3 minutes, then transfer the veggies to a plate.
  4. In the same skillet, heat another 2 tablespoons of olive oil. Season the sliced chicken with smoked paprika, chili powder, salt, and pepper.
  5. Cook the chicken in the skillet, stirring occasionally until browned and cooked through, about 7-10 minutes.
  6. Add minced garlic and lime juice to the chicken, and cook for an additional 2 minutes.
  7. Stir in the butter until melted and combined, then return the cooked veggies to the pan to heat through.
  8. Garnish with freshly chopped cilantro before serving.

Notes

For added flavor, you can marinate the chicken in lime juice and spices for a couple of hours before cooking. Ensure not to overcook the zucchini to maintain some crunch.
