- 2 tablespoons olive oil
- 2 medium zucchini sliced
- salt and pepper to taste
- 1.5 cups corn kernels cooked
- 1 lb chicken breasts skinless boneless sliced
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- ¼ teaspoon salt
- black pepper freshly ground to taste
- 5 cloves garlic minced
- 2 tablespoons freshly squeezed lime juice
- 4 tablespoons butter divided
- ½ cup fresh cilantro chopped
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the sliced zucchini, season with salt and pepper, and cook until slightly tender, about 4-5 minutes.
- Add the corn kernels and cook for another 2-3 minutes, then transfer the veggies to a plate.
- In the same skillet, heat another 2 tablespoons of olive oil. Season the sliced chicken with smoked paprika, chili powder, salt, and pepper.
- Cook the chicken in the skillet, stirring occasionally until browned and cooked through, about 7-10 minutes.
- Add minced garlic and lime juice to the chicken, and cook for an additional 2 minutes.
- Stir in the butter until melted and combined, then return the cooked veggies to the pan to heat through.
- Garnish with freshly chopped cilantro before serving.
Notes
For added flavor, you can marinate the chicken in lime juice and spices for a couple of hours before cooking. Ensure not to overcook the zucchini to maintain some crunch.
