Description

  • 2 1/2 cups chicken bone broth
  • 1/4 cup heavy cream
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons unsalted butter
  • melted
  • 1/2 cup shredded reduced-fat Cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 4 cloves garlic
  • minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 1/2 pounds skinless
  • boneless chicken breasts
  • 2 tablespoons unsalted butter
  • melted
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the jasmine rice, frozen riced cauliflower, chicken bone broth, heavy cream, Greek yogurt, melted butter, Cheddar cheese, Parmesan cheese, Dijon mustard, Worcestershire sauce, minced garlic, Italian seasoning, and red pepper flakes. Mix until well combined.
  3. Spread the mixture evenly in a greased 9×13-inch baking dish.
  4. Season the chicken breasts with melted butter, garlic powder, smoked paprika, onion powder, salt, and pepper. Place the seasoned chicken on top of the rice mixture in the baking dish.
  5. Cover the baking dish with aluminum foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 5-10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Let it cool for a few minutes before serving. Enjoy!
