- 3 medium apples peeled and diced (about 2 ½ cups)
- 2 tablespoon butter
- ¼ cup granulated sugar
- 2 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 2 tablespoon water
- 1 package 8-count refrigerated biscuits or 2 refrigerated pie crusts cut into circles
- vegetable oil about 2–3 cups

Instructions
- In a saucepan over medium heat, melt the butter and add the diced apples. Cook until they begin to soften.
- Stir in the granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, vanilla extract, cornstarch, and water. Cook until the mixture thickens, then remove from heat and let cool.
- If using biscuits, flatten each biscuit into a circle. If using pie crusts, cut into circles.
- Place a spoonful of the apple filling in the center of each circle. Fold over and seal the edges with a fork.
- Heat vegetable oil in a deep pot over medium-high heat. Fry the pies in batches until golden brown, about 2-3 minutes on each side.
- Remove from oil and drain on paper towels. Dust with powdered sugar or drizzle with caramel sauce and cinnamon sugar mixture before serving.
Notes
For a quicker option, use store-bought refrigerated biscuits or pie crusts. Ensure the oil is hot enough before frying to achieve a crispy texture.
