  • 8 fresh peaches – peeled
  • pitted and sliced into thin wedges
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter
  • chilled and cut into small pieces
  • ¼ cup boiling water
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, ¼ cup white sugar, ¼ cup brown sugar, ¼ teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Gently toss to combine and set aside.
  3. In another bowl, mix the flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt.
  4. Cut in the chilled butter until the mixture resembles coarse crumbs.
  5. Stir in the boiling water until just combined.
  6. Pour the peach mixture into a greased baking dish and drop spoonfuls of the batter on top.
  7. Sprinkle with 3 tablespoons of sugar and 1 teaspoon of cinnamon.
  8. Bake for 30 minutes or until the topping is golden brown and the peaches are bubbly.
