Ingredients
8 fresh peaches – peeled
pitted and sliced into thin wedges
¼ cup white sugar
¼ cup brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup all-purpose flour
¼ cup white sugar
¼ cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons unsalted butter
chilled and cut into small pieces
¼ cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sliced peaches with ¼ cup white sugar, ¼ cup brown sugar, ¼ teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss well to coat the peaches and let sit for 10 minutes.
- In another bowl, mix the flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Add the boiling water to the flour mixture and stir just until combined.
- Pour the peach mixture into a greased baking dish and spoon the batter over the top.
- Sprinkle with 3 tablespoons of sugar and 1 teaspoon of cinnamon.
- Bake for 30-35 minutes or until the topping is golden brown and the peaches are bubbling.
Notes
Serve warm with vanilla ice cream for an extra treat. You can substitute with frozen peaches if fresh ones are not available.
