18–24 medium peaches
3 cups of honey
9 cups of water
Lemon juice optional
Instructions
- Start by sterilizing your pint jars and lids in boiling water for 10 minutes.
- While the jars are sterilizing, prepare the peaches by blanching them in boiling water for about 30 seconds, then transferring them to an ice bath to cool.
- Once cooled, peel the peaches, slice them in half and remove the pits.
- In a large pot, combine honey and water. Stir well and bring to a simmer to create the syrup.
- If using, add lemon juice to the syrup and mix.
- Pack peach halves into the sterilized jars, filling them about 3/4 full.
- Pour the hot honey syrup over the peaches, leaving about 1/2 inch of headspace.
- Wipe the rims of the jars to ensure a clean seal and then place the lids on top.
- Process the jars in a boiling water bath for 20 minutes.
- Remove jars from the water bath and let them cool completely on a clean towel.
Notes
Adjust the sweetness of the syrup by varying the amount of honey to suit your taste. Make sure to use ripe, but not overripe peaches for the best flavor.
