Description

Indulge in the delightful flavors of this Fresh Fig Upside-Down Cake with a rich brown butter twist—perfectly easy and homemade!

Ingredients

  • Fresh figs (about 8-10 medium figs / 450-500g)
  • Unsalted butter (8 tablespoons / 115g)
  • Granulated sugar (½ cup / 100g)
  • All-purpose flour (1 ½ cups / 190g)
  • Baking powder (1 ½ teaspoons)
  • Salt (½ teaspoon)
  • Large egg (1)
  • Whole milk (¾ cup / 180ml)
  • Vanilla bean (1 pod)
  • Brown sugar (1/3 cup / 65g)
  • Lemon juice (1 tablespoon)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan, melt the unsalted butter over medium heat until it turns golden brown and develops a nutty aroma. Remove from heat and set aside to cool slightly.
  3. Arrange the sliced fresh figs at the bottom of the greased pan and sprinkle granulated sugar over them to caramelize.
  4. In a mixing bowl, combine the all-purpose flour, baking powder, salt, and brown sugar.
  5. In another bowl, whisk the egg, whole milk, cooled brown butter, scraped vanilla seeds, and lemon juice until well mixed.
  6. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  7. Pour the batter over the figs in the cake pan, spreading it evenly.
  8. Bake in the preheated oven for 30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool for about 10 minutes before inverting it onto a serving plate. Serve warm or at room temperature.

Notes

For an extra touch, serve with whipped cream or a scoop of vanilla ice cream.
