Ingredients
- Fresh figs (about 8-10 medium figs / 450-500g)
- Unsalted butter (8 tablespoons / 115g)
- Granulated sugar (½ cup / 100g)
- All-purpose flour (1 ½ cups / 190g)
- Baking powder (1 ½ teaspoons)
- Salt (½ teaspoon)
- Large egg (1)
- Whole milk (¾ cup / 180ml)
- Vanilla bean (1 pod)
- Brown sugar (1/3 cup / 65g)
- Lemon juice (1 tablespoon)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a saucepan, melt the unsalted butter over medium heat until it turns golden brown and develops a nutty aroma. Remove from heat and set aside to cool slightly.
- Arrange the sliced fresh figs at the bottom of the greased pan and sprinkle granulated sugar over them to caramelize.
- In a mixing bowl, combine the all-purpose flour, baking powder, salt, and brown sugar.
- In another bowl, whisk the egg, whole milk, cooled brown butter, scraped vanilla seeds, and lemon juice until well mixed.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour the batter over the figs in the cake pan, spreading it evenly.
- Bake in the preheated oven for 30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool for about 10 minutes before inverting it onto a serving plate. Serve warm or at room temperature.
