- 1 ¾ cups fresh figs
- 3 large eggs
- ½ cup applesauce
- ½ cup white sugar
- ½ cup brown sugar
- ¼ cup flaxseed meal
- 1 teaspoon ground cinnamon
- 1 teaspoon pumpkin pie spice
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 cup all-purpose flour
- 1 ¼ cups old-fashioned oats
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the fresh figs, eggs, applesauce, white sugar, and brown sugar, mixing until well blended.
- Add the flaxseed meal, ground cinnamon, pumpkin pie spice, baking soda, and baking powder to the mixture, stirring until combined.
- Fold in the all-purpose flour and old-fashioned oats until just mixed.
- Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
