- 1 scoop vanilla protein powder
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 ripe banana mashed
- 1 large egg
- 3/4 cup almond milk
- 1 tsp vanilla extract
- 1/2 cup fresh blueberries
- 1 tbsp coconut oil for cooking
Instructions
- In a large mixing bowl, combine oat flour, protein powder, baking powder, cinnamon, and salt.
- In a separate bowl, mash the ripe banana, then add the egg, almond milk, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
- Heat coconut oil in a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve warm with your favorite syrup or toppings.
Notes
Make sure not to overmix the batter to keep the pancakes fluffy. You can substitute fresh blueberries with frozen, but adjust cooking time if needed.
