Ingredients

Instructions
- In a mixing bowl, combine 1 cup of cottage cheese, 2 large eggs, 1/2 cup of oat flour, 2 tablespoons of your chosen sweetener, 1 teaspoon of vanilla extract, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt.
- Blend the mixture until smooth and well combined. If desired, fold in optional add-ins like 1/4 cup of blueberries or chocolate chips.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.
- Pour about 1/4 cup of the batter onto the skillet for each pancake and cook until bubbles form on the surface, about 3-4 minutes.
- Flip the pancakes and cook for an additional 2-3 minutes or until golden brown.
- Serve warm with your favorite toppings such as yogurt, maple syrup, or fresh fruit.
Notes
