Description
Finnish Salmon Soup (Lohikeitto) is a creamy, comforting dish featuring tender salmon, potatoes, and vegetables, perfect for warming up on a chilly day.

- 30 g (2 tbsp) butter
- 3 carrots
- peeled and chopped
- 1/2 leek
- chopped
- 500 g (1 pound 2 oz) potatoes
- 1200 ml (5 cups) fish broth or water
- 500 g (1 pound 2 oz) salmon fillet
- skin removed
- 80 ml (1/3 cup) whipping cream
- 1 tbsp fresh dill or 1/2 tsp dried dill
- 1 tbsp fresh dill

Instructions
- In a large pot, melt the butter over medium heat. Add the chopped carrots and leek, cooking until softened.
- Add the chopped potatoes and fish broth (or water) to the pot. Bring it to a boil and then reduce to a simmer for about 15 minutes, or until the potatoes are tender.
- Stir in the salmon fillet and simmer for about 10 minutes, or until the salmon is cooked through.
- Add the whipping cream and dill to the pot, stirring gently. Cook for an additional 5 minutes.
- Serve hot, garnished with additional fresh dill.
Notes
You can substitute the fresh dill with dried dill if fresh is not available. For added flavor, consider using a robust fish broth.
