Description

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 ½ cups whole-milk ricotta cheese
  • 1 cup white sugar
  • ¾ cup unsalted butter
  • softened
  • 3 large eggs
  • at room temperature
  • 1 ½ teaspoons almond extract
  • 4 fresh figs
  • chopped into 1/2-inch pieces
  • 1 tablespoon all-purpose flour
  • 4 fresh fig slices
  • 1 teaspoon confectioners’ sugar
  • or as needed (Optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan with nonstick cooking spray.
  2. In a bowl, whisk together 1 ½ cups flour, baking powder, and salt.
  3. In another bowl, beat the ricotta, sugar, and softened butter until smooth.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the almond extract.
  5. Gradually fold in the dry ingredients until just combined.
  6. Gently mix in the chopped figs and 1 tablespoon of flour to coat them.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Top with fresh fig slices and bake for 30 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving, dust with confectioners’ sugar if desired.

Notes

For an extra touch, serve with whipped cream or a scoop of vanilla ice cream.
