  • 1/2 cup (60g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/3 cup Greek yogurt
  • 1/3 cup extra virgin olive oil
  • 1/2 cup honey
  • 2 large eggs
  • 8 fresh figs
  • quartered
  • 1/4 cup sliced almonds
  • 1 tablespoon granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, mix together almond flour, all-purpose flour, ground cinnamon, baking soda, and kosher salt.
  3. In another bowl, whisk together Greek yogurt, olive oil, honey, and eggs until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the quartered figs gently into the batter.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Sprinkle sliced almonds on top and optionally dust with granulated sugar.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool for 10 minutes, then remove from the pan and transfer to a wire rack.
  10. Serve with additional figs and a drizzle of honey.

Notes

For a gluten-free version, ensure that the all-purpose flour is gluten-free. You can also use different nuts if desired.
