- 1/2 cup (60g) all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/3 cup Greek yogurt
- 1/3 cup extra virgin olive oil
- 1/2 cup honey
- 2 large eggs
- 8 fresh figs
- quartered
- 1/4 cup sliced almonds
- 1 tablespoon granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, mix together almond flour, all-purpose flour, ground cinnamon, baking soda, and kosher salt.
- In another bowl, whisk together Greek yogurt, olive oil, honey, and eggs until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the quartered figs gently into the batter.
- Pour the batter into the prepared cake pan and smooth the top.
- Sprinkle sliced almonds on top and optionally dust with granulated sugar.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes, then remove from the pan and transfer to a wire rack.
- Serve with additional figs and a drizzle of honey.
Notes
For a gluten-free version, ensure that the all-purpose flour is gluten-free. You can also use different nuts if desired.
