Description

This Fig Bread Recipe with Fresh Figs combines the sweetness of ripe figs and bananas with wholesome ingredients, creating a delightful and moist bread perfect for any occasion.

Ingredients

Scale
  • 2 tablespoon flax meal
  • 6 tablespoon water
  • ½ cup maple syrup
  • ¼ cup olive oil
  • 3 ripe bananas mashed
  • 1½ cup fresh figs stems removed and chopped into pieces
  • 1 teaspoon cinnamon
  • 2 cups all purpose flour
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup walnuts crumbled
  • Figs for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a small bowl, mix the flax meal and water to create flax eggs. Let it sit for about 5 minutes until it thickens.
  3. In a large mixing bowl, combine the maple syrup, olive oil, mashed bananas, and flax eggs. Mix until well combined.
  4. Fold in the chopped fresh figs and cinnamon to the wet ingredients.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Gradually incorporate the dry ingredients into the wet mixture until just combined. Be careful not to over-mix.
  7. Gently fold in the crumbled walnuts.
  8. Pour the batter into the prepared loaf pan and top with additional figs if desired.
  9. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a richer flavor, let the bread sit overnight before slicing. Store in an airtight container for up to 3 days or freeze for longer storage.
