Ingredients

  • 1 cup chopped pitted dates
  • 1 cup chopped dried figs
  • ¼ cup cold unsalted butter cut into chunks
  • 1 ½ teaspoons baking soda
  • 1 cup boiling water
  • ½ cup white sugar
  • ½ cup chopped walnuts
  • 2 large eggs
  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the chopped dates, figs, and boiling water. Let it sit for 10 minutes to soften.
  3. Add the butter, white sugar, and eggs to the fruit mixture, mixing well until combined.
  4. In a separate bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
