- 1 tablespoon olive oil
- 2 medium sweet potatoes peeled and diced into 1/2-inch cubes
- fine sea salt and freshly-ground black pepper
- 5 ounces arugula or baby kale
- 1 avocado thinly sliced
- 1/2 cup crumbled goat cheese or feta or blue cheese
- 1/2 cup chopped pecans lightly toasted
- 1/3 cup dried cranberries
- Dressing Ingredients:3 tablespoons olive oil
- 1 tablespoon freshly-squeezed lemon juice
- 1 teaspoon Dijon mustard
- 1 small clove garlic pressed or minced
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly-cracked black pepper
Instructions
- Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, then spread them on a baking sheet. Roast for 25-30 minutes or until tender and lightly caramelized.
- In a large bowl, combine arugula or baby kale with the roasted sweet potatoes, sliced avocado, crumbled cheese, toasted pecans, and dried cranberries.
- In a small bowl, whisk together the dressing ingredients: olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper. Drizzle this dressing over the salad and toss gently to combine.
