Description

This Favorite Fall Salad is a delightful blend of sweet and savory flavors, featuring roasted sweet potatoes, creamy avocado, and tangy goat cheese, all topped with a zesty lemon dressing.


Ingredients

  • 1 tablespoon olive oil
  • 2 medium sweet potatoes peeled and diced into 1/2-inch cubes
  • fine sea salt and freshly-ground black pepper
  • 5 ounces arugula or baby kale
  • 1 avocado thinly sliced
  • 1/2 cup crumbled goat cheese or feta or blue cheese
  • 1/2 cup chopped pecans lightly toasted
  • 1/3 cup dried cranberries
  • Dressing Ingredients:3 tablespoons olive oil
  • 1 tablespoon freshly-squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic pressed or minced
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-cracked black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, then spread them on a baking sheet. Roast for 25-30 minutes or until tender and lightly caramelized.
  2. In a large bowl, combine arugula or baby kale with the roasted sweet potatoes, sliced avocado, crumbled cheese, toasted pecans, and dried cranberries.
  3. In a small bowl, whisk together the dressing ingredients: olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper. Drizzle this dressing over the salad and toss gently to combine.
