- 1 tablespoon olive oil
- 1/2 medium onion chopped
- 1 pound ground turkey
- 2 heaping tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper or to taste
- 1 (14 ounce) can red kidney beans drained
- 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies with juices
- 1/2 cup water or chicken broth
- Salt & pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the ground turkey to the pot and cook until browned, breaking it apart as it cooks.
- Stir in the tomato paste, Worcestershire sauce, chili powder, garlic powder, ground cumin, smoked paprika, and cayenne pepper. Cook for another minute.
- Add the kidney beans, diced tomatoes with their juices, and water or chicken broth. Stir to combine.
- Bring the mixture to a simmer, then reduce the heat and let it cook uncovered for 20-30 minutes, stirring occasionally. Season with salt and pepper to taste.
Notes
Feel free to adjust the spice levels by adding more cayenne pepper or chili powder. You can also customize the toppings according to your preference.
