Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium onion chopped finely
  • 1 teaspoon grated fresh ginger
  • 3 cloves garlic minced
  • 4 heaping tablespoons Thai red curry paste
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • Juice of 1 lime
  • 3.5 ounces uncooked rice noodles
  • 1 (13.5 ounce) can full fat coconut milk
  • 2 cups shredded cooked chicken
  • Generous handful fresh basil torn
  • Handful fresh cilantro chopped
  • Chopped scallions to taste
  • Salt & pepper to taste
  • Lime wedges for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened.
  2. Stir in the grated ginger and minced garlic, cooking for an additional minute until fragrant.
  3. Add the Thai red curry paste and stir well to combine.
  4. Pour in the broth and water, then bring the mixture to a boil.
  5. Once boiling, add the lime juice and uncooked rice noodles.
  6. Reduce heat to medium and simmer for about 5 minutes, or until the noodles are tender.
  7. Stir in the coconut milk and shredded chicken, warming through for another 2-3 minutes.
  8. Season to taste with salt and pepper. Serve hot, garnished with fresh basil, cilantro, and chopped scallions. Add lime wedges on the side if desired.

Notes

Feel free to adjust the amount of curry paste to suit your heat preference. You can substitute the shredded chicken with tofu or shrimp for a different twist.
