- 2 lbs ground beef
- 1 large onion
- 3 cloves garlic
- 2 cans (14.5 oz each) diced tomatoes
- 2 cans (15 oz each) kidney beans
- 1 can (6 oz) tomato paste
- 2 cups beef broth
- 3 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Optional: 1-2 fresh jalapeños

Instructions
- In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the diced onion and minced garlic to the pot, cooking until the onions are translucent.
- Stir in the diced tomatoes, kidney beans, tomato paste, and beef broth.
- Season with chili powder, cumin, smoked paprika, salt, and pepper. If desired, add diced jalapeños for extra heat.
- Bring to a simmer and cook for about 30 minutes, allowing flavors to meld.
- Serve hot, topped with shredded cheese, sour cream, and chopped green onions if desired.
Notes
For a lighter version, substitute ground beef with turkey or chicken and use vegetable broth. Adjust seasoning to taste.
