Ingredients

  • 2 lbs ground beef
  • 1 large onion
  • 3 cloves garlic
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 cans (15 oz each) kidney beans
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: 1-2 fresh jalapeños

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion and minced garlic to the pot, cooking until the onions are translucent.
  3. Stir in the diced tomatoes, kidney beans, tomato paste, and beef broth.
  4. Season with chili powder, cumin, smoked paprika, salt, and pepper. If desired, add diced jalapeños for extra heat.
  5. Bring to a simmer and cook for about 30 minutes, allowing flavors to meld.
  6. Serve hot, topped with shredded cheese, sour cream, and chopped green onions if desired.

Notes

For a lighter version, substitute ground beef with turkey or chicken and use vegetable broth. Adjust seasoning to taste.
