1/4 tsp vinegar
1 cup flour
3/4 tsp baking powder
1/4 tsp salt
4 eggs
1 cup sugar
1 tbsp vanilla extract
2 cups whipping cream
2 tbsp sugar
1 tsp vanilla extract
1 lb fresh strawberries
Instructions
- Preheat the oven to 375°F (190°C) and line a 15×10 inch jelly roll pan with parchment paper.
- In a small bowl, combine milk and vinegar, set aside for 5 minutes.
- In a mixing bowl, whisk together flour, baking powder, and salt; set aside.
- In a large bowl, beat eggs and sugar until thick and pale.
- Stir in vanilla extract and the milk mixture.
- Gently fold in the flour mixture until just combined.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
- Once baked, immediately invert the cake onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake up with the towel and let it cool completely.
- Meanwhile, whip the cream with sugar and vanilla extract until soft peaks form.
- Once the cake is cool, unroll it and spread the whipped cream over the top, then add sliced strawberries.
- Roll the cake back up without the towel and refrigerate for at least 1 hour before serving.
Notes
For best results, make sure to use fresh strawberries and let the cake roll chill in the fridge to set the filling.
