- 1 teaspoon pure vanilla extract
- 3 tablespoons heavy cream
- plus more for brushing tops of scones
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together all the dry ingredients: flour, granulated sugar, light brown sugar, baking powder, cinnamon, pumpkin pie spice, ginger, and salt.
- Grate the frozen butter into the dry mixture and use a fork or pastry cutter to combine until the mixture resembles coarse crumbs.
- In a separate bowl, mix the wet ingredients: pumpkin puree, egg, vanilla extract, and heavy cream until well combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
- Turn the dough out onto a lightly floured surface and shape it into a circle about 1-inch thick. Cut into wedges or use a biscuit cutter to make rounds.
- Place the scones on the prepared baking sheet. Brush tops with additional cream.
- Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
Notes
For an extra touch, drizzle glazed icing over the cooled scones or sprinkle with powdered sugar.
