Description

These Easy Pumpkin Scones are a delightful seasonal treat, bursting with fall flavors and perfect for breakfast or brunch.

Ingredients

Scale
  • 2 ¼ cups all-purpose flour
  • spooned and leveled
  • 3 tablespoons granulated sugar
  • 3 tablespoons light brown sugar
  • lightly packed
  • 2 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • 8 tablespoons unsalted butter
  • 1 stick
  • frozen
  • ½ cup 100% pure pumpkin puree
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons heavy cream
  • plus more for brushing tops of scones

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together all the dry ingredients: flour, granulated sugar, light brown sugar, baking powder, cinnamon, pumpkin pie spice, ginger, and salt.
  3. Grate the frozen butter into the dry mixture and use a fork or pastry cutter to combine until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix the wet ingredients: pumpkin puree, egg, vanilla extract, and heavy cream until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  6. Turn the dough out onto a lightly floured surface and shape it into a circle about 1-inch thick. Cut into wedges or use a biscuit cutter to make rounds.
  7. Place the scones on the prepared baking sheet. Brush tops with additional cream.
  8. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.

Notes

For an extra touch, drizzle glazed icing over the cooled scones or sprinkle with powdered sugar.
